Chicken Salad in a Jar

For The Salad:

  • 1/4 tsp sea salt
  • 1/4 tsp garlic powder
  • 1/8 tsp ground black pepper
  • 1 tbsp extra vergin olive oil
  • 2 chicken breasts, boneless and skinless
  • 1 cucumber, peeled and sliced
  • 1 cup cherry tomatoes, quartered
  • 1 cup mixed salad 
  • 1/2 cup red onion, diced 
  • 1/2 cup carrot, grained 

For the Dressing:

  • 1/2 cup plain full fat greek yogurt
  • 1/4 cup unsweetened almond milk
  • 1 tbsp apple cider vinegar
  • 1/4 tsp dill 
  • 1/4 tsp garlic powder
  • 1/4 tsp sea salt


  1. Season the chicken breast with sea salt, black pepper, and garlic powder.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Once hot, add the chicken and cook until well-browned on all sides and cooked through, about 4-6 minutes per side.
  4. Dice into bite-size pieces and let cool.
  5. For thedressing, simply whisk together all ingredients.
  6. Using a 32 oz mason jar, layer about 2-4 tbsp. of the salad dressing, followed by the carrot, cucumber, cherry tomatoes, diced onion, chicken and mix salad
  7. Perfect for a summer picnic!
